Gluten Free Pound Cake ; Gluten Free Butter Cake; Gluten Free Tea Cake

 

How I missed the old fashioned pound cake (also called butter cake and nowadays tea cake) after going gluten free. But since my gluten free son liked his cakes only to be those filled with chocolate, this butter cake had to wait.

This time I was determined to try my old recipe with gluten free ingredients. Did it work? Oh it simply rocked!  You couldn’t tell that it was gluten free. This is not what I say. I haven’t tasted the real Maida cake for ages now to tell that.A friend who is an awesome chef herself, said so.

I am on cloud nine eating away this spongy pound cake, which tastes just like the cake my mother used to make (in the cooker) when we were growing up. Old memories revived, sans the gluten !

I repeat myself in each of my posts that I do not use any gums or husks or chia seeds or flaxseeds to bind my gluten free bakes. All My gluten free bakes are gum free/huskfree/additive free. This is for you to know that I am as committed to your health as I am to mine. I wouldn’t use any ingredient which has even a remote chance of interfering in your healing process.

 

I use my own flour blend.  I prefer to use roasted rice flour instead of  the usual rice flour for all my cakes. You could make your own roasted rice flour at home or purchase it off the shelf. I do a combination. Make my own sometimes, or order in from amazon.in. Double Horse is the brand I use. It is called pathiri/appam/idiyappam flour as well.

This recipe yields a very spongy buttery cake . Muffins turn out great too.

Instructions
  1. Preheat the oven to 180 degrees C and line or dust your baking pan well.
  2. Mix the flour and the baking powder together and sieve. Add in salt and mix well. Set aside.
  3. Use an electronic beater to mix butter and sugar until well combined . The sugar would still be visible and not be completely dissolved.
  4. Add Eggs, one at a time. Beat well after each addition of egg until creamy.
  5. Scrape down the sides for even mixing.
  6. Add in vanilla essence and mix well.
  7. Fold in the flour into the mixture and mix well using the upwards and downwards movements with a spatula.
  8. Add in the milk/yogurt.
  9. Pour in the baking pan.
  10. Bake until golden brown and cooked, about 40 minutes
  11. Once done, remove and let it stay for it to cool down a bit before removing from the pan.
  12. Remove from pan and let it cool further on wire rack. Ensure that you do not try to remove it when it is still very hot.

For Home Made Gluten Free Cake flour : blend the following using a hand whisk.

2 cups roasted rice flour ( Double horse from amazon.in or make at home )

1/3 cup tapioca flour (brands:Sartaj,Urban Plater, Red Bob's Mill :from amazon.in)

2/3 cups potato starch (ZeroG)
