Eggs aren’t my friend;

Gluten, my biggest foe.

My wait seems to end;

As an Angel walks in, tip toe;

I am going to taste ;

What I call ‘my world’s best’.

A moist chocolate cake;

With no gluten, dairy or eggs.

I had a promise to keep. In fact , not just one, quite a few of them.

Last few months were crazy for me and kept me away from what I love doing the most : Sharing new gluten free healthy foods with my larger family : The Gluten Free Family.

Finally a Dark chocolate cake which is Eggless, Dairy Free, Oil Free and yet tastes GREAT!

It was for the Christmas Carnival at my child’s school that I decided to showcase a Gluten Free Cake from my kitchen. It had to be an eggless cake as per the school’s instructions. I decided to take up the challenge and attempt a cake which would be free of all things unhealthy. Pure cocoa is very good for all of us and is a healing food. Hence, the choice of a chocolate cake.

I honestly did not expect such a positive response from the audience (other parents and children). The cake was loved by one and all.

I did hear some parents talk ‘wonder how it was made, it looked and tasted just like a normal cake’. O My …. It did make my day! All my nervousness was gone and I was a super confident Mom , feeling proud of my creation. And my son simply loved it. I tried my hand on icing for the first time with this cake. I used homemade buttercream icing . Will share the recipe soon. The icing is NOT dairy free.  Dairy Free homemade icing is my next project. Should be up on the blog soon. Below is the cake I showcased for the Christmas Carnival in my son’s school.

This recipe is adapted from one of my old recipes from the wheat days. All I did was make a few replacements:

  • All Purpose Flour gave way to  Homemade Gluten Free Cake Flour
  • Eggs were replaced by pureed banana
  • Oil/butter gave way to homemade unsweetened apple sauce
  • Refined sugar was replaced by cane sugar

And Voila ! This cake was Fab!

My next target is to do away with sugars of any kind and use alternate healthy sweeteners instead. Hope to be able to do it soon.

Moist Dark Chocolate Cake: Eggless; Dairy Free

  1. Line the baking dish with parchment paper at the base.
  2. Mix all the dry ingredients and whisk them well .
  3. Make a well in the middle and slowly add all the wet ingredients leaving the water for last.Mix well. A basic wire whisk is enough . You could also use your electric mixer at slow to medium speed.
  4. Add water.Mix well. Do not worry about over mixing.
  5. Pour in the prepared pan.
  6. Switch the oven ON to 350 degrees F (175 degrees C) for preheating. Wait for about 15 to 20 minutes before you begin to bake.
  7. Bake in the preheated oven for 40 minutes to an hour, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool before you cut.
Recipe Notes

The Icing I used is not dairy free. I used home made Buttercream Icing. Buttercream icing used is Gluten Free and Eggless. Dairy Free icing is a project I am working on. Should be up on the blog soon.
